Easy and Nutritious Baked Oatmeal Bars for Effortless Meal Prep

I adapted this recipe to make it my own. It does involve some tweaking with the amount of oats, milk and the cooking time. You made need to adjust those things to your liking.

Ingredients:

  • 2 cups oats (don’t use the quick cooking oats)
  • ¼ cup hemp hearts
  • ¼ cup chia seeds
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • 2 teaspoons cinnamon (I use pumpkin pie seasoning instead of cinnamon when I make it with pumpkin)
  • 1 cup milk of choice (I like Fairlife)
  • 1 cup plain Greek yogurt
  • 1 teaspoon vanilla extract
  • 2 egg whites
  • Fruit of your choice:
    • Mix of blueberries, raspberries and blackberries (I do about 2 cups of berries. I like to use a lot because I am trying to get a serving of fruit in each bar)
    • I cup of pumpkin
    • Diced apple
    • Frozen fruit

Directions:

  1. Preheat the oven to 350 degrees.
  2. Spray an 8×8 baking dish with cooking spray.
  3. In a large mixing bowl, mix together all of the dry ingredients.
  4. Add in the remaining ingredients and mix well.
  5. Add the mixture to your prepared baking dish.
  6. Bake in the preheated oven for 35-45 minutes.
  7. Cut into 6 squares and enjoy! Eat it cold or warm it up and top it with some more Greek yogurt and a dash of maple syrup.
